Épingler  Crunchy baguette slices topped with a tangy cornichon & carrot slaw, perfect for an elegant appetizer or light snack.
The first time I made these Cornichon & Carrot Slaw Baguette Bites was for a casual get-together with friends. Everyone loved the crunchy texture and the fresh, tangy taste.
Ingredients
- Carrots: 1 cup (100 g), peeled and julienned
 - Cornichons: 6, finely chopped
 - Fresh parsley: 2 tbsp, chopped
 - Shallot: 1 small, finely diced
 - Mayonnaise: 2 tbsp
 - Dijon mustard: 1 tsp
 - White wine vinegar: 1 tsp
 - Freshly ground black pepper: 1/4 tsp
 - Salt: To taste
 - Baguette: 1 small, cut into 12 thin slices
 - Unsalted butter: 2 tbsp, softened (optional, for spreading)
 - Extra parsley: For garnish
 
Instructions
- Prepare the slaw:
 - In a medium bowl, combine the julienned carrots, chopped cornichons, parsley, and shallot.
 - Make the dressing:
 - In a small bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, black pepper, and salt.
 - Mix slaw and dressing:
 - Pour the dressing over the carrot mixture and toss until well combined. Taste and adjust seasoning as needed.
 - Prepare baguette slices:
 - Lightly toast the baguette slices if desired. Optionally, spread a thin layer of butter on each slice.
 - Assemble bites:
 - Spoon a generous amount of the cornichon & carrot slaw onto each baguette slice.
 - Garnish and serve:
 - Garnish with extra parsley. Serve immediately.
