01 - Preheat oven to 375°F. Generously butter and lightly flour a madeleine pan.
02 - Melt the butter in a saucepan and allow to cool to room temperature.
03 - In a mixing bowl, beat together eggs and granulated sugar with an electric mixer or whisk until very pale and thick, about 3 minutes.
04 - Stir in vanilla extract, almond extract, and lemon zest.
05 - Sift flour, baking powder, and salt. Gently fold into the egg mixture.
06 - Fold in melted and cooled butter just until incorporated.
07 - Spoon batter into prepared molds, filling each approximately three-quarters full.
08 - Bake for 10 to 12 minutes, until golden and just springy to the touch.
09 - Remove from oven and carefully turn madeleines out onto a wire rack to cool completely.
10 - Whisk together powdered sugar, cherry liqueur, gin or vodka, lemon juice, and strained cherry preserves until smooth and pourable.
11 - Once madeleines are cool, dip or drizzle with cherry martini glaze. Garnish with chopped maraschino cherries if desired. Allow glaze to set before serving.
